Our roasted cauliflower steaks are perfectly tender with a golden sear and finished with a drizzle of fresh chimichurri. A standout main for cozy date nights or easy, family-friendly dinners!
Ingredients:
- 2 Cauliflower heads
- 1½ tsps Kosher Salt, divided
- ½ tsp Black Pepper
- ½ tsp Garlic Powder
- ½ tsp Paprika
- ½ cup Olive Oil, divided
- 1/2 cup Flat Leaf Parsley, finely chopped
- 4 Garlic Cloves, grated
- 1 tbsp fresh Oregano or 1/2 tsp dried
- 3 tbsps Red Wine Vinegar
- Red Pepper Flakes to taste
Instructions:
- Preheat oven to 500°F. Trim cauliflower and cut into 1½-inch steaks; place on a baking sheet.
- Mix 1 tsp salt, pepper, garlic powder, and paprika. Brush steaks with ¼ cup olive oil and season both sides. Cover with foil and roast 5 minutes. Uncover, roast 10 minutes, then flip and roast 6 to 8 minutes until golden.
- While the cauliflower is roasting, mix the parsley, garlic, oregano, vinegar, and red pepper flakes in a medium bowl. Mix well as you slowly pour in the olive oil.
- Remove the cauliflower from the oven and transfer to a platter or serving plates. Serve warm, topped with chimichurri. Enjoy!
