These cookies are soft, chewy, and warmly spiced, everything a good oatmeal raisin cookie should be!

 

Ingredients:

  • 1 Cup All-Purpose Flour
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Sea Salt
  • 1/2 Tsp Cinnamon
  • 1/2 Cup Coconut Oil or Unsalted Butter, Melted
  • 3/4 Cup Packed Brown Sugar
  • 1 Large Egg
  • 1 Large Egg Yolk
  • 2 Tsp Vanilla
  • 1 1/2 Cup Whole Rolled Oats
  • 3/4 Cup Raisins
  • 1/2 Cup Chopped Walnuts (Optional)

 

Recipe:

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine the melted coconut oil (or butter), brown sugar, egg, egg yolk, and vanilla. Whisk well until smooth and fully blended.  Pour the wet mixture into the dry ingredients and mix until just combined. Fold in the oats, raisins, and walnuts if using, until the dough comes together. Let the dough rest for about 20 minutes.
  4. Scoop out tablespoon-sized portions (you should get around 20), gently roll them with slightly damp hands, and place them on the prepared baking sheets with space between each.
  5. Bake for 10 to 11 minutes, or until the cookies are puffed and lightly golden but still soft in the center. Allow them to cool on the baking sheet for 5 minutes before moving them to a wire rack to finish cooling.
