So many of our favorite things in one bowl! We love this tart salad, perfect for boosting your immune system in the Winter.

Ingredients

1 cup Cooked Quinoa

3 ½ cups Chopped Kale

2 ½ tbsps Olive Oil

2 ½ Grapefruits

½ Pomegranate

1 Avocado, cubed

1 tbsp Apple Cider Vinegar

Salt + Pepper

Steps

Remove the stems and chop your kale. Toss with 1/2 tablespoon olive oil and massage the kale.

Cut one and a half grapefruits into segments and add to the bowl with the kale, along with the pomegranate, avocado, almonds, and quinoa.

Juice the leftover half grapefruit and mix in a jar with 2 tablespoons olive oil, and apple cider vinegar. Salt and pepper to taste. Pour over salad and toss to coat. Top with lime slices. Enjoy!
