A delicious recipe that you can use any flavor of Yanni’s Loukaniko Sausage and it will come out great!
Ingredients
2 tsps Olive Oil
2/3 cup diced Onions
3-4 cups Fresh Baby Spinach
1 clove Garlic, minced
3 large Eggs
¼ tsp ground Black Pepper
1 tsp Italian Seasoning
1 cup Low Fat Ricotta Cheese
2 oz crumbled Feta Cheese
¼ cup grated Swiss Cheese
¼ cup grated Parmesan Cheese
4 links Yanni’s Loukaniko Sausage
Steps
Preheat the oven to 350 degrees.
In a skillet, add olive oil and sauté sausages that have been cut into coins. Cook until they are golden brown and transfer to a plate.
Add onions to the skillet and cook until translucent. Add spinach and garlic and sauté for 2 min, or until the spinach is wilted. Remove pan from heat.
Whisk the remaining ingredients together in a medium mixing bowl. Stir in spinach mixture and add the cooked sausage coins.
Pour mixture into pie plate that has been sprayed with cooking spray. Bake on the center rack for 40 min. Let rest for 4 min before slicing. Enjoy!
