Ingredients
- 12 oz Baby Bay scallops
- 1 (16 oz) box linguine
- 1/4 cup olive oil
- 1 tbsp minced garlic
- 3 tbsp lemon juice
- 1/3 cup grated Parmesan cheese
- 1 bunch basil, stems removed
Steps
- In a large pot, cook the linguine according to package directions, reserving ½ cup cooking liquid.
- Meanwhile, heat the oil on medium-high in a 10-inch skillet. Add the garlic and cook for 3 minutes, stirring often. Add the bay scallops and cook until scallops are cooked through, about 2 minutes, stirring occasionally. Season with salt.
- In the same pot, toss linguine with the scallop mixture, lemon juice, Parmesan, basil, and reserved cooking liquid until well combined. Season with salt and pepper.
